White pepper is usually milder than black pepper, with less complex flavor, but more aromatic. It is less strong than black pepper, but richer in flavor with sweet overtones.
White pepper is often used in dishes that need a peppery bite but where you don’t want to see black flecks all over. So, ground white pepper is mostly used in cream sauces, Chinese and Thai cuisine, and dishes like salads, light-colored sauces, pastas and mashed potatoes.
